How to store an opened wine bottle

A Sommelier advice

It’s a Tuesday night, you just got back home and you start making dinner. You really really want to open that bottle of Piemonte wine you received from your Somm friends at Oneonthehill but it’s just the two of you, you’re afraid you won’t finish the bottle and the bottle will go to waste.

Fear not, here’s some advice to help you store your wines after opening so you wont have to pair your delicious dinner with a glass of water.

Cultural difference: from our time in the States we’ve noticed that it’s more common to refrain from drinking during the week to sometimes drink too much over the weekend while in Italy, France, and probably other parts of Europe (feel free to chime in here with a comment about your country) it’s normal to drink every day. Our parents drink a glass of wine with each meal every single day, sometimes it’s even half a glass just to compliment the food.

How to store a bottle of wine after it has been opened: cork it, put it in the fridge or under the sink if it’s cool and dark enough, cool enough is 15-16 celsius. I promise you the bottle will be fine for at least the next 2 days. After the 3rd day a lot of variables come into play like the structure of the wine, the age and the amount of oxygen it has seen before it went into the bottle.

Obviously, you can use a Coravin to extend the bottle life, this video is not sponsored by Coravin, and sometimes we use it too because it’s honestly a great tool. But for everyday consumption the good old cork will definitely do the trick.
