This untouched biodiversity creates a region unlike any other in Italy. To celebrate this wild beauty, we’ve partnered with a master of sustainable living and gastronomy: Chef Paolo.
After years working in Michelin-starred kitchens, Chef Paolo chose a different path—one rooted in the mountains. He forages for wild herbs, plants, and ingredients, crafting meals that honor the earth’s bounty.
Every ingredient in his cooking is foraged or hunted by Paolo himself, bringing you closer to nature through every bite.
Chef Paolo resides in Melle, a picturesque village in the Piemonte mountains, just 1 hour from Alba and 1.5 hours from Torino. For the cooking class or dinner, Chef can travel to your destination (additional transfer fees apply).

Join Chef Paolo for a guided foraging excursion in the woods, collecting ingredients for your meal. Then, step into the kitchen for a hands-on cooking class, culminating in a 5-course feast.

Masterclass in Wild-Game Butchery
Dive into the art and sustainability of responsible hunting in this immersive masterclass. Learn about butchery techniques and the human connection to food. Perfect for all skill levels, this experience can include hands-on butchery for the adventurous. A 5-course meal concludes the day.

Pier was awesome!
Pier at one on the hill was so fantastic!!!!! He was not only a wine tour guide but treated us like a friend. We loved our experience and can not wait to return to Alba & visit more vineyards with Pier and his team. Alba was surprisingly exceptional and we have a new respect for their grapes, food & people! Look forward to seeing you all again soon :)
